Spinach shrinks a lot when cooked, so it's worth using it generously – about 200 grams of fresh spinach makes one serving once cooked. Spinach cooks fast, wilting in just a few minutes on a hot pan or in a pot.
Popular ways to use it include creamed spinach, spinach-filled pancakes and spinach in creamy pasta sauces or soups. Frozen spinach is a handy alternative to fresh, as long as you thaw it first and squeeze out the extra liquid before using it.
You can also add spinach right at the end of cooking, so it wilts only slightly and keeps more colour and texture – this works well stirred into a stir-fry or pasta just before serving.
