Tofu is a mild-tasting soy-based protein that absorbs the flavour of marinades and seasonings very well. Firm tofu is best for frying and stir-fries, while softer tofu works well in sauces, scrambles and desserts where a smooth texture is wanted.
For the best texture, pat the tofu dry with paper towel before frying and cook it on a hot pan without turning it constantly – this lets a crisp crust form on the surface. Tofu marinates quickly, so 10–15 minutes in soy sauce is enough for good flavour.
Popular combinations include stir-fried tofu with vegetables, tofu stew in coconut milk and curry paste, and a tofu scramble where the tofu is crumbled and seasoned with turmeric for an egg-like colour and flavour. All of these also work well packed for lunch the next day.
