Penne in a Delicate Tomato Sauce with Juicy Sausage and Kale

Pour water into a larger pot and bring it to a boil. Salt the water, add the pasta, and cook according to the package instructions.

Peel and finely chop the onion. Peel and chop the garlic. Rinse the cherry tomatoes and cut them in half. Rinse the kale, remove the tough stems, and slice the leaves into strips.

Once the pasta is al dente, drain it and toss with a tablespoon of oil.

Heat oil in a large pan. Slice the sausage into rounds, add it to the pan, and sauté for about 5 minutes, stirring frequently.

Add the onion, garlic, cherry tomatoes, and kale, and sauté for another 2 minutes.

Add the tomato paste and season the mixture with salt, pepper, fennel seeds, herbs and white vinegar.

Pour the crushed tomatoes into the pan, rinse the can with water, and add it to the mixture. Bring to a boil and cook over low heat for 6-8 minutes.

Add the pasta and briefly heat it through.

Serve on plates and serve immediately.
