The recipe combines tender, juicy chicken with a rich, creamy sauce enhanced by fresh tarragon and tomato paste. Mashed potatoes with butter perfectly complement the dish with their smooth texture, creating a balanced combination of flavors.

Mashed Potatoes:: 1 kg potatoes; 0.5 tspsalt; 3 tbspbutter
Chicken Stew:: 1 onion; 2 garlic clove; 3 carrot; 1 pkgfresh tarragon; 1 pkgchicken breasts; 2 tbspoil; 1.5 tspsalt; 1 tspblack pepper; 2 pkgwine vinegar; 1 pkgtomato purée; 1 pkgcooking cream; 2 dlwater

Tip

You can also season the chicken mixture with mustard for a subtle flavor enhancement.

Pour 2–2.5 liters of water into a large pot for the potatoes and bring it to a boil.

Peel the potatoes, wash them, and cut them into smaller pieces. Salt the water with a pinch of salt, add the potatoes, reduce the heat to low, and cook until tender.

Peel and finely chop the onion and garlic. Peel, wash, and dice the carrot. Wash and finely chop the tarragon.

Cut the chicken into pieces.

Heat 1–2 tablespoons of oil in a pan over medium-high heat. Add the chicken pieces and sauté for approximately 6–8 minutes, stirring occasionally.

Add the onion and carrot to the pan. Continue sautéing for another 2 minutes. Season the mixture with salt, pepper, white wine vinegar, then add the tarragon and tomato paste.

Pour cream into the pan, rinse the package with approximately 2 dl of water, and add it to the mixture. Bring to a boil and then simmer over low heat for about 8–10 minutes.

Drain the cooked potatoes and mash them well with a masher or fork. Mix in 2–3 tablespoons of butter and season with salt to taste.

Serve the chicken mixture on plates and accompany it with a portion of mashed potatoes. Enjoy your meal!
