Feta is a salty, crumbly cheese made from sheep's or goat's milk, that works well in both cold salads and hot oven bakes. When heated, feta softens but keeps its shape, which makes it a good choice for bakes and fillings unlike many other cheeses.
Popular ways to use feta include feta triangles in crisp filo pastry, oven-baked feta with tomato sauce, and feta in a Greek salad with cucumber, tomato and olives. Brush the filo triangles with melted butter or oil before baking so the pastry crisps evenly.
Baked feta is easiest to make by putting a block of cheese in a dish with tomatoes and herbs and baking at 200°C for about 20 minutes, until the feta has softened and the tomatoes have broken down into a juicy sauce. Serve it as is with bread or stir it through pasta.
