Sweet Potatoes:: 2 pkgsweet potato; 1 tspsalt; 0.5 tspblack pepper; 2 tbspoil
Chickpea:: 1 pkgchickpeas; 0.5 chili; 1 tspsalt; pinch black pepper; 1 pkgcumin; 1 pkgpaprika powder; 3 tbspoil
Chili Cucumber:: 1 cucumber; 0.5 chili; 1 pkgcoriander; 0.5 tspsalt; 2 tspsugar; 0.5 tbspoil; 1 lime
Dip:: 1 pkgsour cream; 1 pkgsweet chili sauce

Tip

Pat the chickpeas dry with a paper towel before seasoning for extra crispiness.

Preheat the oven to 225°C. Line a baking tray with parchment paper.

Wash the sweet potatoes thoroughly and slice them into 1 cm thick slices. Arrange on the baking tray, season with salt, black pepper, and oil. Roast in the oven for about 20 minutes.

Rinse the chickpeas in a sieve under cold water and drain well. Transfer to a bowl. Finely chop half a chili and mix it in. Season with salt, black pepper, cumin, paprika powder, and oil.

Wash and slice the cucumber into another bowl. Finely chop the remaining chili and mix it in along with chopped coriander. Season with salt, sugar, and oil. Grate in the lime zest and squeeze in the juice.

After the sweet potatoes have roasted for about 20 minutes, spoon the chickpeas over them and continue roasting for about 10 minutes.

Mix the sour cream and sweet chili sauce together.

Serve roasted sweet potatoes and chickpeas on plates. Top with chili cucumbers and the prepared dip. Serve immediately.
