Pasta Sauce:
1 zucchini
1 pkghalloumi-type cheese

Prepare the seasoning mix. In a small bowl, grate the zest of a washed lemon and squeeze out the juice. Peel and grate the garlic. Season with oil, salt, and black pepper. Finely chop the parsley and add it to the mixture. Stir well and let it marinate.

Pour 4–5 liters of water into a large pot and bring it to a boil. Salt the water, add the pasta, and cook over medium heat according to the instructions on the package. Then, drain the pasta thoroughly and toss it with a tablespoon of oil.

Wash the zucchini and slice it into rounds.

Cut the halloumi cheese into cubes.

Heat a pan with some oil. Add the halloumi cubes to the pan and fry until golden brown. Place the cheese on a paper towel to drain excess oil.

Reheat the same pan and add more oil. Add the zucchini to the pan and sauté, stirring constantly, for 5–7 minutes, until the zucchini develops a light color. Season with salt and black pepper.

Add the cooked pasta, halloumi cheese, and the seasoning mix. Toss everything together and heat briefly.

Serve the pasta mixture onto plates and serve immediately.
