Juicy chicken drumsticks gain a rich and bold flavor thanks to aromatic harissa paste. Gently caramelized carrots roasted with a touch of honey blend with light, fluffy rice. The entire dish is crowned with a fresh and creamy cucumber sauce that harmoniously ties everything together.

Chicken:: 1 pkgchicken drumsticks; 1 pkgharissa paste; 1 tbspoil; 1 tspsalt
Carrots:: 1 pkgcarrots; 1 tbspoil; 1 pkghoney; 1 tspsalt; pinch black pepper; 1 pkgdried thyme
Rice:: 1 pkgbasmati rice
Cucumber dressing:: 1 cucumber; 2 pkgnatural yogurt; 1 garlic clove; 1 pkgwhite vinegar; pinch salt; pinch sugar

Tip

To make the chicken even juicier and full of flavor, marinate the drumsticks with salt, harissa paste, and oil the day before.

If you prefer milder dishes, use less harissa paste.

Preheat the oven to 200°C and line a baking sheet with parchment paper. Place the chicken drumsticks on the sheet, drizzle with oil, season with salt, and coat with harissa paste. Bake for 20–25 minutes.

Peel and wash the carrots, then cut them and place in a bowl. Drizzle with oil, season with honey, salt, black pepper, and dried thyme.

Bring water to a boil for the rice. Rinse the rice in a sieve and cook according to package instructions.

After 20 minutes, remove the chicken from the oven and add the carrots to the tray. Bake for an additional 25 minutes until both the chicken and carrots are perfectly cooked.

Wash the cucumber, grate it into a sieve, and squeeze out any excess liquid. Transfer to a bowl and add the yogurt. Peel the garlic, grate it, and stir it in. Season with white wine vinegar, salt, and sugar.

Serve the chicken drumsticks with roasted carrots and rice, and top with the cucumber sauce.
