One pot recipes for an easy dinner with less washing up – our chefs pick the ingredients and deliver them to your door.
One pot means a meal where everything – protein, vegetables and pasta or rice – cooks in the same pot or pan. There is little washing-up and plenty of flavour, because the starch from the pasta or rice stays in the sauce and thickens it naturally.
The most popular one pot recipes are minced meat pasta, chicken and rice stew and vegetable stew. The order is always the same: brown the protein, soften the onion and spices, add tomato or stock, and only then the dry pasta or rice. The amount of liquid is key – for pasta, about 2.5 dl of stock per 100 g of pasta, and for rice, 2 dl of stock per 1 dl of rice. Stir every few minutes so the bottom does not burn.
Let the dish simmer with the lid on over low heat: pasta is ready in about 12–15 minutes and rice in 18–20 minutes. If the sauce looks thin, take the lid off for the last few minutes; if it is too thick, add stock a little at a time.
For creaminess, stir in cooking cream, cream cheese or a plant-based alternative at the end, and add fresh basil or parsley only after you turn off the heat. Ruokaboksi one pot meals come portioned for four, so there is no need to guess the amount of liquid.
