Beetroot recipes for a colourful, healthy dinner – our chefs pick the ingredients and deliver them to your door.
Beetroot boiled in its skin cooks in about 40–60 minutes depending on size, or in about an hour wrapped in foil in the oven at 200 °C. The skin comes off most easily after cooking, rubbed off with your fingers under cool running water.
The most popular beetroot dishes are homemade pickled beetroot, beetroot soup and oven-roasted beetroot with goat's cheese. Pickled beetroot keeps for several weeks in a sealed jar in the fridge, and the flavour improves after a few days of resting.
You can stop beetroot colouring the other ingredients by adding it to a salad last, or by wearing gloves when cutting it. Beetroot can be swapped for carrot or parsnip if you want to avoid the staining altogether.
Beetroot soup, or borscht, is made from cooked beetroot, cabbage and meat stock; a splash of sour cream at the end balances the sweetness. Beetroot leaves are edible too and behave like spinach in the pan.
In Ruokaboksi's beetroot recipes, the root vegetables and spices come pre-portioned, so a beetroot dish turns out well even if the ingredient is new to you.
