Minutes alone cannot tell you when salmon is done: thickness, starting temperature and oven accuracy all matter. Combine timing with a food thermometer and the fish’s texture.

How to measure salmon temperature

For safe home cooking, bring fish to at least 70°C internally. Serve fully cooked fish to people in higher-risk groups.

Insert the probe sideways into the thickest part without touching the tray. Check near the end and let the fish rest for a couple of minutes.

Timing by cooking method

Portions usually cook faster than a whole fillet, so start checking early. In a pan, begin skin-side down and turn only near the end.

Cooked salmon flakes gently with a fork and is evenly warm in the centre. If the outside dries before the centre cooks, lower the heat or cover it.
