Rinse the corn in a sieve under cold water and let it drain. Wash the cucumber, cut it into cubes, and add it to the corn. Remove the core from the pepper, rinse it, and slice it into strips. Place all the ingredients in a bowl, drizzle with oil, season with salt, black pepper, and lime juice and mix well.

Peel the garlic and finely chop it.

Heat the oil in a pan over medium-high heat. Add the ground meat and garlic, and sauté for about 5 minutes. Season with taco seasoning and the spice mix, and cook for another 2–3 minutes. Add salt to taste.

Heat the tortillas on a dry pan over medium heat briefly on each side until soft and slightly warmed.

Spread salsa on the tortillas. Add the ground meat, corn salsa, sour cream, and drizzle with lime juice.

Roll up or fold the tortilla in half and serve. Enjoy.
